Using The Kenwood Spiralizer
Confession: I can’t stop spiralizing vegetables. Why has it taken me so long to try out courgetti?! I soo understand the hype now, I can’t get enough of swirly carrots.
I was kindly gifted this Kenwood spiralizer* from Debenhams, and I wasn’t totally sure what to do with it at first. After googling vegan friendly spiralized meal ideas, I came across Vegangela’s blog which has a whole host of amazing vegan dishes!
I try and live healthily anyway, I’m completely meat/dairy/anything animal free and try my hardest to ensure my diet has all the nutrition it needs and heaps of veggies. Don’t get me wrong I enjoy a treat now and again but I was keen to give this a go if it meant I could cut down on pasta. As much as I love pasta and all the carbs, they never make me feel good. I’m always left feeling bloated and generally just a bit ‘blergh’ so this seemed totally ideal.
I was so surprised at how easy the spiralizing process (once I figured out how to do it which took longer than I care to admit ha) was and before I knew it, I had the perfect healthy replacement for pasta! I followed Angela’s recipe, which involved a delicious cashew nut sauce, kale and chickpeas. Honestly, it was AMAZING and you would totally think it had cream in it but it was just the creaminess of the cashews. Who needs dairy? Not me! I’ve definitely found a new staple in my diet and can’t recommend courgetti spaghetti enough! Have you guys tried using a spiralizer before? What did you think?
